Tanee's Mock Potato Salad - low carb

This was a huge hit yesterday....my mom didn't even notice it wasn't potatoes until one of my kids told her ;) 

I've been really craving potato salad & this made me happy lol


Serves: 15
Preparation Time: 45 minutes

Ingredients
  • 2 medium head (5-6" dia) Cauliflower, raw
  • 1-1/2 cups Mayonnaise, regular
  • 4 medium slices(yield after cooking) Bacon or side pork, fresh, cooked - crumbled
  • 2 medium stalk (7-1/2" - 8" long) Celery, raw - diced small
  • 1 teaspoon Mustard
  • 4 large Egg, whole, boiled - chopped up
  • 4 tablespoons dill relish
  • 1 cup, chopped Onions, yellow, sauteed
Instructions
  1. Chop up the cauliflower heads and place in pot of water to boil.  Boil until fork easily pokes into.
  2. Drain cauliflower very well, if you do not it will make everything soupy
  3. Put cauliflower in a big bowl & mix in all the rest of the ingredients. Salt & pepper to taste.
  4. Chill in fridge for a few hours then serve :)
